Introducing Tatsuya Sinkai, a chef whose journey spans Tokyo, Sydney, Auckland, Kyoto, and Stockholm, each city shaping the way he cooks.
A pivotal moment came at Pasture in Auckland, where he discovered a deep love for wood-fired and fermented cuisine. In Kyoto at LURRA, he pushed boundaries with local ingredients and modern Japanese technique. And in Stockholm at Ekstedt, he mastered the art of cooking solely over wood fire - no gas, no electricity, just pure skill.
Now, he brings his bold, borderless approach to Bali for two exclusive takeovers.
